Field notes

Nothing wasted

Modern Savage

Lung is the last of the organs and probably the one nobody expected.

But it has real data behind it: the USDA has analysed it heavily.

Iron. Beef lung is one of the richest iron foods you can eat: roughly 8mg per 100g raw, against about 5mg in liver and 2–3mg in steak, and it's the haem form the body absorbs best.

Vitamin C. The surprise. Lung carries around 38mg per 100g raw, roughly what you'd get from lemon juice. Organ meats like this are how our ancestors thrived on carnivore diets!

That closes the organ blend. Liver, kidney, heart, spleen, testes and lung, grass-fed, coming to 2,500mg a scoop. Six things almost none of us eat any more, in one place, without having to cook any of them.

The rest of the pouch is more familiar. Next comes the kids' formula and what is different about it, then the collagen and the protein, then the fibre, then the vitamins. But the organs were the reason we started this, and if you have made it through six notes about offal, you are our kind of person.
