Meat is not one thing

Modern Savage

We buy meat as if it were one product. Beef is beef, chicken is chicken, and the difference between the cheap one and the dear one is a bit of tenderness and a label about welfare.

We think that is wrong, and we will say it bluntly. Meat is not one thing. An animal that lived outside, walked, and ate grass for its whole life is, nutritionally, a different food from an animal that stood in a shed eating grain and soy for six months to get heavy fast. The fat is different. The vitamins in the fat are different. What is in the liver and the heart of the two animals is different, because those organs hold what the animal ate.

The same goes for fish. A line-caught fish that ate what the sea gave it and a farmed fish that ate pellets are not the same food wearing the same name, and the colour of a farmed salmon comes from an additive in the feed.

This matters to us for an obvious reason. Everything in Modern Savage that came from an animal came from one that lived on grass, and that was the most expensive decision we made and the one we would least like to give up. It matters for the whole shop too. Grass-fed, line-caught, pasture-raised. Those words describe the food itself, which is why grass-fed is on our label.
