Field notes

Alive when it gets there

Modern Savage

A lot of the live cultures sold in capsules never make it. They are alive in the factory, mostly alive on the shelf if the shelf is cool enough, and then they meet the acid in the stomach and that is largely the end of them. You paid for bacteria and swallowed a very expensive protein.

The culture in Modern Savage is Bacillus coagulans, sold under the name LactoSpore, and it is a different kind of organism. It travels as a spore, the way a seed travels, with a hard coat around it. In that form it does not much care about heat, or years on a shelf, or stomach acid. It wakes up when it reaches the part of you it is meant for, and once there it does what a good gut bacterium does: makes lactic acid, crowds out the ones you do not want, and helps break down what you have eaten.

We believe gut health is the foundation of everything else in the pouch, and that most of us have had ours thinned out by antibiotics, processed food and a lifetime of too little fibre. So the fibre and the cultures go in together, the food and the thing that eats it. That is why we could put it in a powder, in a pouch, in a kitchen cupboard, and mean it. No fridge involved and nothing dying in the dark.
